You would never know this creamy decadent mocha mousse was free from dairy, egg and reﬁ ned sugar. It is so rich and ﬁ lling that you only need a little to feel completely satisﬁ ed. With desserts like this, you won’t feel deprived on your SIBO diet.
1 ripe avocado
2 tbs raw cocoa powder
1 oz strong espresso
3 tbs raw organic honey
1 cup coconut milk, no thickeners or gums, chilled for at least 6 hours
Place the avocado, cacao powder, espresso and honey in a food processor and blend until creamy.
Changing to a whipping blade, add the ﬁ rm coconut cream from the tin. Don’t use the watery liquid at the bottom. This can be kept for another recipe. Whip until light and ﬂ uffy.
Spoon into bowls and refrigerate for 1 hour before serving.
